Method:

  • Firstly, preheat the oven to 350 °. Butter the muffin tins or line up the baking cups. In the next bowl, mix 2/3cup sugar and 1tbsp lemon zest. Use your hands to rub the sugar until the zest is evenly mixed.
  • Whisk in 2 1/4cup flour, 2tsp baking powder, and 1/4tsp kosher salt. With the help of an electric mixer, mix the 1/2 cup of unsalted butter by cutting it into small cubes. Make sure the butter is evenly mixed without leaving behind any large pieces. Take 2 large eggs and a rubber spatula to fold them and 2/3 cup of milk until they are combined together.
  • Scoop 1 tablespoon of batter into each prepared muffin cup, fold the 1 1/2 cup of chopped strawberries in the remaining batter. Divide the strawberries evenly into all the muffin cups. If required sprinkle 2tbsp granulated sugar on top of the muffins.
  • In the last step, bake it for 20-25 minutes. Take a toothpick and check if the muffins are ready by inserting it inside the cup. If the wooden stick comes out clean, it means your muffin is ready to eat. Let the dish cool in the tin itself for about 10 minutes.
